Today I made an attempt at Gluten Free deserts (besides previous highly sucessful take-juice-pour-into-ice-cube-trays-insert-into-freezer-deserts). And it turned out much better than expected. Because I could actually eat it!
Ingredients -
1/2 Box - Gluten Free Chocolate Rice Crispy-like cereal
(EnviroKidz Koala Crisps - Picture Copyright EnviroKidz)
150grams (about 1/2 10oz bag) - Gluten-free Marshmallows
2 tablespoons Dairy free Margarine or other Butter Substitute (next time I want to try with Olive Oil)
Instructions -
1) Melt all margarine and marshmallows in a pan. Stir constently to prevent the marshmallows from burning to the bottom of the pan.
2) Mix the melted sauce together with the Koala Crisps until evenly coated (do very quickly or else the whole thing will solidify into a very sticky mess.)
3) Place in a separate pan and mould into a square, circle or other easy-to-cut shape. DO NOT press down on the warm mix or it will become too dense to easily eat.
Hints:
If the marshmallows are starting to burn, add more margarine or olive oil. (or enjoy "smoky flavor")
If the mix is not sticky enough, add more marshmallows before mixing in the Koala Crisps.
If there is too much marshmallow mix, add more Koala Crisps sparingly.
